An Illustration of Sushi Assortments (20251204) 🍣
Release: December 2025
This illustration shows takeaway sushi assortments displayed in the seafood section of a Japanese supermarket. In Japan, sushi is typically sold in two areas of supermarkets: the seafood section and the delicatessen section. In both cases, sushi is generally sold in chilled temperature zones, and the assortments offered in these two sections are different.
Sushi sold in the seafood section is usually sourced and prepared by the supermarket’s own fresh fish department or by an in-store fishmonger operating as a tenant. These assortments often feature raw toppings. Fish may be filleted in a backroom adjacent to the sales floor, and in some cases ingredients that have never been frozen are used to emphasize freshness. Compared with delicatessen sushi, the toppings tend to be larger and prices are higher. Some consumers purchase these products as a “special treat” rather than for everyday meals.
Common raw toppings include salmon, tuna, yellowtail, sea bream, raw squid, and steamed shrimp. Among these, yellowtail and sea bream are species that are widely farmed in Japan.
Sushi assortments sold in the delicatessen section are typically made using toppings that have been sliced, vacuum-packed, and frozen by suppliers at processing plants in Japan or overseas. These products are more affordable and positioned as everyday meals. Delicatessen assortments often include cooked sushi and non-seafood items, such as rolled sushi without raw ingredients and inari sushi, where rice is wrapped in sweetened fried tofu.
Over many years, sales in Japanese supermarket seafood departments have remained flat or declined, while delicatessen sales have continued to grow. Reflecting changing consumer habits, many retailers are now strengthening their focus on ready-to-eat items such as sushi assortments, even within the seafood section.
